How would the servers be maintained? How would the collected data be used?

I can tell you that all that hardware will be located within the car itself. Cars will have a version of the "NVIDIA Jetson AGX Thor Developer Kit" inside it that handles all the AI and processing locally. But the question then turns to... what data is it capurting and where is that data being uploaded to for future refinement?

If you park your fully autonomous car in your garage will it also record its surrounding within the garage and record everything you are doing in there? And all the privacy concerns that go with that.
