Great job on that valve swap! They are never easy to remove from the PEX in my experience. I have done something similar in the past a couple of times, while it may be some work it's cheaper than paying a plumber. That costs five arms and a leg! Well done!
That meat and mac and cheese look awesome. How did they taste?
