Vegan Sunday: Healthy Pasta Salad 🥗

Hope you are enjoying the weekend eating some delicious healthy vegan 🌱 foods. I have also prepared a delightful vegan recipe and so delighted 😁 to share it with you because I know you will love 💕 it.

Pasta 🍝 is what many of us love and we love to prepare them in various ways to enjoy 😊 with family because its a versatile food in the kitchen and it definitely comes out good and very tasty.

One thing is to enjoy our pasta 🍝 as dishes or as a meal 🥘, another thing is to prepare them more healthy, adding lots of vegetables 🥗 to them as veganlovers , which makes them more enjoyable and delightful.

So today friends I did not just made a pasta dish but a healthy vegan 🌱 pasta 🍝 salad 🥗 that is loaded with fresh vegetables 🥬 snd taste so good. A Sunday lunch everyone really enjoyed.

Who will not love a pasta salad? And this very one I have craved for weeks now . Bringing it to the table this Sunday was what I really love because its going to be another added recipe to the kitchen roaster . And this pasta 🍝 salad 🥗 is not totally cold because of the process I used here and comes together under 40 minutes, also perfect as a meal 🥘

Here I share the step by step of this healthy pasta salad 🥗

INGREDIENTS:

150 g of twisted pasta
Bunch of lettuce leave 🥬
3 medium size carrots
1 large cherry tomatoes 🍅
1/2 of a large red onions
1 tablespoon of soy sauce
1/2 teaspoon of chili powder
1/4 teaspoon of salt

EXTRA INGREDIENT:

4 glasses of water

STEPS FOR PREPARATION:

Step 1.

I will start by preparing the vegetables readily

Here washed and sliced chop the carrots and onions as above


The lettuce 🥬 and cherry tomatoes 🍅 I will wash, sterilize and slice them readily too.

Step 2.

Here have them all ready to move to the next stage.

Step 3.

Next is to add the water into a pot and set it on the cooker covering it to boil.

As here above.

Step 4.

Once the water boils briskly, I will add the pasta as above.

Then will add salt and cover to cook.



Once it cooks half way, I will add the carrot and onions to the pasta stirring to tender a bit.

Step 5.



Set it down in another minute and drain it into a basket 🧺 before taking it into a bowl 🥣 for mixing.

Step 6.


Here I will add the chili 🌶 powder, then the soy sauce.

Stir them properly together incorporating.

Step 7.

And to plate into a healthy pasta salad 🥗, I will add the lettuce 🥬 as base here,



Then the pasta gradually here above, garnishing the sides more with lettuce.

Added more lettuce 🥬 garnish and the cherry tomatoes here above, and its all ready to the table 😍.

This easy healthy pasta salad 🥗 recipe takes just about 40 minutes to make and its loaded. And what I love about this salad is its freshness from the crunch veggies marinated.

We can serve this as lunch, make it for picnic 🧺 or even to entertain friends for light dinner during a get together as its rich and healthy.
