How amazing to be with my vegan family today again and I hope you are all in wellness. I am too and delighted to share with you some healthy pancakes I made for lunch 🥞🥗.
Pancakes 🥞 are one recipe that comes together so easy and quickly in our kitchens, especially as a family where we have children. But this very pancake 🥞 of today’s recipe is one specially prepared for vegan 🌱lovers because I have prepared and garnished the pancakes with lettuce 🥬 and onions for that tasty delight.
These are the easiest, fluffy and delicious 😋 pancakes 🥞 with simple ingredients I bet we must have in the kitchen or pantry. They are so light, fluffy due to how I have used non - dairy milk that contains some vegetable oil making it more of vegan 🌱, with strawberry 🍓 essence and touch of nutmeg 🌰that perfectly made it flavorful.
Here are the simple steps for this vegan 🌱 delight.
INGREDIENTS:
200 g of all purpose flour
1/2 of a large onion Leaves of lettuce 🥬
2 tablespoons of premium sugar
1 teaspoon of strawberry
1/4 salt to taste
3/4 baking powder
1 packet of non dairy milk
20 ml of vegetable oil (for frying)
Grate of nutmeg
1/2 of a ball of lime.
1/2 glass of spring water
STEPS FOR PREPARATION:
Step 1
I will start by washing and sterilizing the lettuce 🥬 with salt .
Then leave it here to drain off water before slicing the lettuce

Step 2.
Will slice the onions here readily
And have the veggies here
Step 3.
Next I will add the flour in a bowl,
adding the baking powder, salt and sugar here.
Grated nutmeg 🌰into the flour and stir to incorporate .
Step 4.
Added the non dairy milk here and stir to incorporate .
Step 5.
To mix batter, I will add some spring water and gradually will mix to obtain loose consistency.
Add the strawberry essence here.
And squeeze some lime here
Step 6.
Finally will start frying the pancake 🥞 by adding thinly vegetable oil.
Gradually will scoop the batter into the frying pan 🍳, allowing to fry and bubble before flipping it over.
As here above too.
And its all fried and ready.
Step 7.
And will serve it in style with some lettuce 🥬 and onions for garnishing.
This easy delicious pancakes come together quickly once we have some ingredients at home. And you can also make it in your own version to enjoy it the best way either for breakfast or lunch.
I love when my meals are garnished with vegetables 🥗 because it makes me know am getting some healthy vitamins especially when they are raw veggies like lettuce and onions.
