Baked Corn Fritters - A Healthier Option 🥖🌽
Happy weekend to hivers and friends of vegan 🥰💕.
How are you all today, with family and friends resting and enjoying something good. Especially to make some snacks 🥖for relaxation aside from main meal 🥘.
.Am so delighted 😀 to share with you this very recipe I made from leftover corn 🌽. Its a baked corn fritters made in rolls from young corn. As we all know fritters are what we can make so easy and quickly if we have every ingredient available, but most times we end up frying our fritters which leaves it with more calories and an extra consumption of fatty foods.
The idea to this recipe is how we can also bake fritters to make them healthier just like I did in this recipe. Baked corn 🌽 fritters is a much healthier option to deep fried fritters. This means with lesser oil used in the cooking process, we can really enjoy the recipe without any guilty feelings of much calorie consumption.
Interestingly, corn 🌽 fritters are known as fried cake of a dough or a batter made of or containing some quantities of maize . Its a cuisine that is known around the world 🌎 and enjoyed by many especially in Southern United State, as well as Indonesia 🇮🇩 where they are known as perkedel jagung or bakwan jagung . Haha 😆.
Its a delicious snack but with some work since I have to get to cut the corn 🌽 from the cob. But to make easy and quick, you can use a packaged corn or sweet tin corn.
Here I take you through the procedure step by step.
INGREDIENTS:
2 fresh corns
100 g of wheat flour
1 tablespoon of margarine
1 packet of non- dairy vegetable milk
2 teaspoons of premium sugar
1/2 teaspoon of baking powder
1/8 cup of spring water
1/4 salt
STEPS FOR PREPARATION:
Step 1,
Since we are not using packaged but fresh corn, we will cut out all the corn 🌽 from the cob as above here.
Then we add the corn in a pot, wash and place it on the cooker to start cooking .
Step 2.
And because its fresh. We will cook boil it for at least 30 minutes until the corn softens and color changes with sweet smell.
Step 3.
Next we pour the wheat in a bowl 🥣, add the sugar, salt and baking powder.
And here we add the non dairy vegetable milk and stir properly to incorporate.
Step 3.
We add the margarine and incorporate it using our finger tips as above.
Step 4.
And here we add the cooked boiled sieved corn.
And stir it into the flour above.
Step 5.
To mix into a dough, we add water 💦 gradually.
Stir and knead into a dough as above.
Step 6.
Then we cut the dough into two here, and in pieces.
And slim roll it for baking as above.
Step 7.
Once the dough is all turned into rolls, we bake for 20 minutes at 180 Celsius. We leave to cool.
Keeping resolutions to cut down on calories and eat healthier is all about mindsets. And it does not just mean we must munch only on celery, brans and grains but we can always tweak our recipes here and there, some baking instead of frying which helps us still eat well.
This delicious baked corn fritters is so healthy and vegan since its made of corn 🌽 and wheat 🌾 . Make this recipe your new tea 🍵, coffee ☕️ time companion since the corn is everywhere now.
