How I prepared a delicious melon soup with bitterleaf.. (egusi soup) in our dialect for dinner.

Good evening foodies bee hive friends, its been a stressful long sunny day but i thank God for a day well spent. I trust you all are good 😊.

I prepared a Nigerian homemade soup precisely from IGBO tribe here in Nigeria. A delicious melon and bitterleaf (egusi) soup with lots of love and goodies πŸ˜‹. Below are the ingredients and steps in preparing it

Ingredients:
Blended Melon seeds (egusi) 1and half cup
Bitterleaf(olugbo)
Dry pepper 1 and half teaspoon
1 cup of red oil
Crayfish
2 teaspoon of salt
2 seasoning cube
Meat 2kilo
Dry fish 3pcs
Achi
2 and half cups of water and the meat stock

Step1:

I washed the meat twice with hot water to remove blood clots on the meat then rinse it with warm water then put it in a cooking pot along with the dry fish and season it before steaming for 10minutes

Step2:

When im done steaming the meat, i kept it aside, dry my pot to start cooking, i love to fry my melon so i added my red oil, then pour the bkended melon to it and fry for some minutes, i stirred continuously before adding a small quantity of my meat stock to avoid the melon to burn and I continued frying

Step3:
Next is to add the remaining meat stock along with the meat and stirred it up for some seconds before adding my seasonal cube, crayfish, pepper, salt

Step4:

I noticed that it was too thick so I added 2and half cups of water because my dad doesn't like a tvery thicker soup, then stirred up very well and covered the pot for it to boil for 4 minutes

Step5:
Finally, i added my vegetable which is bitterleaf, i allowed it to cook for 2minutes before bringing it down

Yes oo, my yummy πŸ˜‹ bitterleaf melon soup is ever ready to dish out

It can be served with semovita, wheat flour, pounded yam, or any other swallow of your choiceπŸ€—.

It's time for me to eat and enjoy my dinner and you can tell that it is head slapping sweet and good 😊

This delicacy is yummy, I love the process of making it, and the fish is my best fish when I was in Aba but I can't find it here.
