Potato Country

I had to laugh! 🥳😆 Just a tat earlier I was reading and responding to one of the latest post by mister Mobbs. He use potato in a whole different context. Potatofication of his classroom 😆

I do love potato. We in the Netherlands have this traditional one pot dishes, a kinda stew, potatoes mashes with vegatiables in it, and depending on the vegies, also meat in it. Yesterday evening I made a big ass pot, with bacon and (raw) endive in it. Yummy! Tonight I will eat the left overs. Looking fwd already. Meatballs to the side. Also have some of those as well.

B52 Idaho

Though I dont recollect the specific Idaho song, I do know the B52's. Have them tapped on tape recorder and tapes back in the days. Must dig those up one day. Perhaps for a future HIVE Collectors post, about tapes. Or I twist one of the previous topics, the one about Vinyls.

What do you call that dish? I feel like I have heard of it before. Colcannon. That's the word I was trying to think of. That's Irish though I think, so probably not the same thing. I think I have Cosmic Thing on vinyl if I remember correctly. That's the only album of theirs I have though..

B52's: Nice, a vinyl! I guess something to do this weekend, find it, play and perhaps dance to it 🎶

Food: in Dutch its 'Andijvie Stamppot' with a Google translation to English 'Endive Mashed Potato'. The translation is a little off.
A close-up look at it... the Endive goes in raw and only warms up a little, so it stays crunchy.

Two things I can do:

  1. Give you the recipes
  2. You come to my country and I cook for you
    Note: pretty easy to make. Mashed patatoes with much butter and milk. Bacon, cubes are best. Endivie.

Lets says:
2kg potatoes, 1kg Endive, 750gr bacon.
Cook they patatoes.
When cooked, mash them with tons of butter and milk until the mash becomes a little less solid.
Bake the bacon until getting close crispy and add to mash.
Add the endive, cut, raw. Let the whole thing sit for a little. Maybe maybe put pan back onto stove again for 1 minute, but preferably not since it cook the endive.

To add extra flavour, for a next round, add: garlic, onions and pepper (the spicy ones, not the bell one). Cook them with the bacon, add kinda like when bacon is half way through. Let the stuff sit on top of the bacon for some minutes and then stir and cook until the onions are glazed and a little less hard.

My wife makes some pretty good garlic mashed potatoes, but she tends to go the healthier route. Far less butter than I would prefer, but she is just trying to keep me around a bit longer I think!
